I’ve been loving soup this winter. However, my soup routine got a bit, well, boring. While I LOVE my standard go-to of bone broth, chicken, sweet potatoes, and avocado I’m just about burnt out. So I decided to create something just as delicious but way more fun!
CHICKEN GNOCCHI SOUP RECIPE
Along with the gluten-free gnocchi and pesto, you’ll need bone broth (the good kind that jiggles when it’s cold), spinach, and a rotisserie chicken. How easy is this? All in all the soup comes together in less than 10 minutes and it’s so amazingly delicious and nourishing.
I really, really love the little bites of pillowy gnocchi in this soup. Almost like dumplings, they feel so comforting without the traditional wheat that’s typically used in the gnocchi. Gluten-Free gnocchi contains over 85% potato and rice flour. I promise even your non-gluten-free family and friends won’t be able to tell the difference.
Since the gnocchi cooks fast once the broth comes to a boil this soup is ready in just minutes. Plus, by using the rotisserie chicken you get even more flavor with less work and no need to roast your own. I typically choose an original style that has more seasonings but a plain one also has plenty of flavors. Be sure to remove all of the skin from the chicken as no one wants that in their soup, thank you.
HOW TO MAKE CHICKEN GNOCCHI SOUP
With only a few ingredients, this soup comes together rather quickly. Make sure you have everything together and measured before you get started.
- Heat the bone broth.
Place a heavy-bottomed pot over high heat and bring the cone broth to a boil.
- Add chicken.
Remove the skin from the Rotisserie chicken and cut into bite-sized pieces. Stir chicken into the bone broth.
- Add Gnocchi and spinach.
Add the gnocchi and spinach to the chicken and broth and stir well. The gnocchi should start floating within 4-5 minutes.
- Add pesto and serve.
Turn off the heat and stir in the pesto just before serving.

Chicken Gnocchi Soup Recipe
- 2 cups Rotisserie chicken cubed, cooked
- 2 cups spinach
- 8 cups bone broth
- 3 tbsp pesto
- 12 oz Gnocchi mini, gluten-free
- Heat bone broth in a large pot over high heat.
- Add chicken to bone broth.
- Add gnocchi and stir well.
- Add 2 cups of spinach leaves. Stir well.
- Stir in the pesto and remove from heat just before serving.
- Remove the skin from the rotisserie chicken and cut it into bite-sized pieces.
- Gnocchi is cooked once it starts to float, typically 4-5 minutes.
- Store Chicken Gnocchi Soup in an airtight container for up to 4 weeks in the freezer.
- Serve with a side salad, breadsticks, roasted zucchini, or roasted potato puffs.
